Chocolate Crackles

A simple one but a goodie and great for parties and get togethers with lots of little fingers around! Guarantee they won’t even know there are GF rice bubbles in there! I may have eaten one myself 🙊🙊

I am going to play around with the recipe a bit to come up with an alternative to using so much icing sugar (I’m hoping to have a totally refined sugar free recipe in the near future, but I also had icing sugar to use up 🤷‍♀️😂) but until I have a chance these make a great, easy GF treat! They are also dairy free!

GF Chocolate Crackles

Ingredients

1 cup GF Rice Bubbles (I used the Freedom Foods ones)
1 cup desiccated coconut
1 cup icing sugar 
3 tbs GF cocoa powder ( I use Plaistowe as it’s 100% cocoa)
250g Copha
GF sprinkles to sprinkle on top

 

 

Method

1. Mix all dry ingredients together except sprinkles in a large bowl
2. Melt copha on stove, allow to cool a little
3. Mix all ingredients together with the copha and spoon into patty cake cases
4. Sprinkle sprinkles over the chocolate crackles
5. Refrigerate until they have hardened

Salted Caramel Popcorn

Ingredients

1/4 cup vegetable oil
1/2 cup popcorn kernels
125g butter
3/4 cup white sugar
2 tbs honey
1/2 - 1 tsp salt (for caramel)
Salt flakes to season

 

 

Method

Popcorn

1. Heat 1/4 cup vegetable oil in a large pot to medium heat, to test the oil, drop in one or two corn kernels, if they start to sizzle and spin the oil is ready, add the rest of the kernels to the pot and put the lid on, shaking the pot occasionally. When you can count to three between pops the popcorn is ready, remove from the heat and put in a bowl.

 

Caramel

2. Melt the butter, sugar, honey and salt in a pot on medium high heat, bring to the boil. 
3. Once bubbling continue to boil for 6-8 minutes or until the caramel is dark golden brown. 
4. Once dark golden brown pour the caramel over the popcorn and make sure to mix around thoroughly so that all popcorn is properly coated!
5. Spread popcorn onto oven trays to allow caramel to set and sprinkle with salt flakes. 
6. Once set break popcorn apart and put it in an airtight container to keep for roughly 3-4 days!
