Day Trips with the Family

Take the hassle out of finding gluten free food options when out for a day trip!

Going out for the day with two Coeliacs to think of can get a bit complicated... 

Finding GF eating options when you are out for adults can be quite easy, gluten free options for kids is decidedly less easy, so generally I try to plan ahead and take our own food. Tomorrow we are headed to The Esplanade in Cairns for a day of swimming and hanging out with cousins! Frankie is beside herself with excitement! 

Typically before diagnosis this would have been the perfect opportunity to grab a hot chook, bread rolls and pasta salad from the supermarket on the way to our adventures, obviously now this isn’t an option. Determined Frankie doesn’t miss out on the awesome Aussie tradition of this cheat meal today I have whipped up a pasta salad and popped a chook in the Webber so that we can enjoy it tomorrow! I will grab fresh GF bread rolls in the morning and normal rolls for the non-Coeliacs!

 

Roast Chook Ingredients

1 whole chicken
Chicken seasoning (make sure it’s GF) 

Method

Coat the chicken with the seasoning, as much or little as you would like and pop it in the oven or Webber following the cooking instructions for what you’re cooking in. I do occasionally make GF stuffing but haven’t bothered to today! We have a 2.4kg chook I’m cooking for 1.5hrs on the Webber. 

Pasta Salad Ingredients 

Half a packet of Barilla Elbows
1 carrot grated
1 gherkin finely diced
2 tbs capsicum finely diced
1/3 cup GF Mayo (I use SW Whole Egg Mayo) or enough to make cost the pasta salad but not too much to overdress it, it really is a personal preference

Method

1. Cook pasta according to the cooking times on the packet (the Barilla elbows take 7 minutes). 
2. When the pasta is cooked drain it quickly and put the pasta back into cool water, with GF pasta you really need to stop it cooking straight away to avoid it becoming gluggy and clumping together. 
3. Once the pasta is cooled mix all of the ingredients together. 

Now you have tasty roast chook and pasta salad for those lazy days you don’t feel like cooking too much! It’s definitely a hit with the kids and they don’t even know it’s GF ðŸ˜‹ðŸ˜‰ðŸ˜‹ðŸ˜‰
